Squeeze the lemon and strain the juice through a fine strainer.
Wash the parsley, dab it with kitchen paper then finely chop it with the peeled garlic on a cutting board.
In a bowl, emulsify the oil with warm water and lemon juice with a whisk.
Add the oregano, chopped parsley, a pinch of salt, a sprinkling of pepper and mix well.

The “Salmoriglio” is a traditional Sicilian sauce used for seasoning meat and fish, especially grilled.
Usually, the parsley is only used if you want to season the fish.
